Eddie Spence MBE, started his career as an apprentice baker for J W Mackie in Edinburgh.
He then went on to study confectionery and cake design and began teaching the skills he had learnt at a wealth of prestigious colleges, including Napier College in Edinburgh, Kedleston College and Wilmorton College in Derby. Eddie’s renowned royal icing skills have earned him the opportunity to decorate many cakes for the royal family, including Her Majesty the Queen’s Golden Wedding anniversary cake and her Diamond Jubilee celebration cake.
Eddie has won The British Open Confectionery Trophy plus many more awards.
His proudest honour was receiving an M.B.E from Her Majesty The Queen in the 2000 honours list.
In March 2010 Eddies book "The Art Of Royal Icing" (published by B.Dutton Publishing) was released. An amalgamation of over 50 years teaching experience and knowledge fitted into a beautifully presented book for cake decorators of all abilities.
In September 2012 Eddie was invited to "The Baking Industry Awards" ran by The British Baker to receive a lifetime achievement award, in the same year he also appeared on Loose Women and celebrated his 80th Birthday.
At the tender age of 82 years young Eddie still enjoys everything about his profession and is still judging,teaching and demonstrating "The Art Of Royal Icing.
His favourite saying is... "I love my job and if you love what you do you never have to work."
